Poli 

Poli or puran poli as it is called is an Indian sweet flat bread made of maida and wheat flour or with only maida with a lentil and jaggery stuffing in it .

But here I have totally made the dough using only and only whole wheat flour .

I have not added maida, it was a  little challenge while spreading out the dough, but still my friends and my family liked it because they is no addition of maida.

Poli is prepared in two parts :

Ingredients for the first part :

  • 3 cups whole wheat flour / 250 gms
  • 2 tbsps oil
  • Water to prepare the dough 
  • Pinch of salt 
  • Pinch of turmeric powder { optional )

Method :

Add oil ,salt ,turmeric powder to the dough, mix and gradually keep adding water to make a very soft dough .

Of course we will not get the elastic texture like when we make the dough purely with wheat flour.  As I said it is a challenge to roll out the poli.

Prepare the dough and keep it aside closed for 30 minutes.

Ingredients for the stuffing :

  • 2 cups of lentils or a combination of Bengal gram and red gram cooked to soft 
  • 2 cups of grated jaggery ( powdered )
  • 1 tsp cardamom powder
  • 1 tbsp clarified butter

In a pressure pan add  required quantity of water , (smear a spoon of oil on top of the gram ),cook the lentils to a soft texture ( 3 whistles ).

Next , heat a pan , pour the clarified butter, add the cooked , strained and mashed lentils and keep stirring.

Half the way through add the powdered jaggery .

Once we add jaggery the lentil pulp becomes watery so keep stirring until the water is evaporated and we get a lump of the stuffing .

Add the cardamom powder ,mix and cool the stuffing .

Once the stuffing is cool enough divide them into lemon size balls and keep aside.

Preparation of poli:

Divide the dough to lemon size balls , using the rolling pin and a board, roll out each balls into just 1  inch in diameter.

Keep one lentil ball (Puran ) into the roti, cover it and again roll out to a bigger size roti .

Do this process with light handedness ,so that the stuffing does not pop out.

Now just fry it on a hot tawa , smearing little

 clarified butter on top .

Let the poli get cooked to a golden colour on both side , remove from pan and serve with hot milk.
